Inspired by the fantastic summer weather, we’ve rustled up some simple but delicious recipes to help you enjoy some alfresco dining:

Honey and Mustard Grilled Chicken

Honey and Mustard Grilled Chicken

Ingredients:

1 tsp. Dijon mustard

2 tbsp. honey

2 tbsp. mayonnaise

1 tsp. brown sauce

4 skinless, boneless chicken breast halves or chicken wings

Method:

  1. In a shallow bowl, mix the mustard, honey, mayonnaise and brown sauce. Set aside a small amount of the honey mustard sauce for basting and dip the chicken into the remaining sauce to coat.
  2. Lightly oil the grill grate. Grill the chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. 

 

Halloumi Kebabs

Halloumi Kebabs

Ingredients:

2 medium courgettes

1 large red onion

250g of halloumi cheese cut into chunks

16 cherry tomatoes

For the baste:

1 tbsp. olive oil

2 tbsp. lemon juice

2 tsp. fresh thyme leaves

1 tsp. Dijon mustard

Method:

  1. Halve the courgettes lengthways, then thickly slice. Cut the onion into wedges and separate into pieces. Thread the halloumi, cherry tomatoes, courgettes and onion onto eight skewers. Cover and chill the kebabs until you are ready to cook.
  2. To make the baste, mix together the olive oil, lemon juice, thyme, mustard and seasoning. (This can be made ahead and chilled.)
  3. Preheat the barbecue or grill and arrange the kebabs on the rack. Brush with the baste, stirring it first to make sure the ingredients are blended. Cook for 4-5 minutes, turning often, until the cheese begins to turn golden and the vegetables are just tender.

  4. Homemade Burgers

    Homemade BurgersIngredients:

Olive oil

1 red onion, peeled and finely chopped

1 x 500g pack of beef steak mince

I tsp. Dijon mustard

1 pinch of salt

4 white rolls

Lettuce leaves

1 beef tomato, sliced

Method:

  1. Heat the olive oil in a frying pan, add the onion and cook for 5 minutes until softened and starting to turn golden. Set aside.
  2. In a bowl, combine the beef mince with the mustard and salt. Add the onions and mix well. Use your hands to shape the mixture into 4 patties.

Cook the burgers on a preheated barbecue or griddle for 5-6 minutes on each side. Meanwhile, lightly toast the cut-sides of the buns on the barbecue. Fill with the lettuce, burgers and tomato slices.

Inspired by the fantastic summer weather, we’ve rustled up some simple but delicious recipes to help you enjoy some alfresco dining:

Greek Pasta Salad

Greek Pasta Salad

Ingredients:

300g fusilli pasta spirals

225g bag of fresh baby spinach

250g punnet of cherry tomatoes, halved

100g black olives

200g feta cheese, broken into rough chunks

3 tbsp. olive oil

Method:

  1. Tip the fusilli into a large pan of boiling salted water and boil for 10 minutes. Throw in the spinach, stir well and boil for another 2 minutes. Drain into a colander or sieve and leave to drip-dry.
  2. Tip the tomatoes, olives and feta into a big bowl, grind lots of black pepper over and then drizzle with the olive oil.
  3. Toss in the drained pasta and spinach.

Non-Alcoholic Mojito

Non-Alcoholic Mojito

Ingredients:

Glass filled with crushed ice

Half a glass of lemonade or ginger ale

Quarter of a glass of apple juice

1 tsp. of golden sugar

8 sprigs of mint

One lime

Method:

  1. Mash the brown sugar with 4 sprigs of mint.
  2. Add a little apple juice as you mash.
  3. Add the rest of the apple juice, lemonade, 4 sprigs of mint and half the lime juice.
  4. Add two lime wedges to serve.

Feet for Life - Caring for Older Feet

Each year the College of Podiatry runs an annual 'Feet for Life' month campaign. This year's theme is 'From Birth to Beyond' to highlight the importance of caring for your feet, and the key foot health issues to be aware of at all life stages...

Each year The College of Podiatry runs an annual 'Feet for Life' month campaign. This is done to raise awareness of podiatry and highlighting how podiatrists are the experts in keeping feet healthy and pain free. This year's theme is 'From Birth to Beyond' to highlight the importance of caring for your feet, and the key foot health issues to be aware of at all life stages. 

As we get older, it is important to implement good foot care to stay active. From around the age of 55, feet can naturally develop problems due to years of daily wear and tear, and because skin loses its elasticity and starts to become thin.

Caring for older feet

A good foot care regime will improve foot health and help prevent common problems:

• Keep toenails short as nails that become too long can press against the end of shoes and cause soreness, and even infection and ulceration.

• Check your feet regularly, daily if necessary, and moisturise (but not between the toes) to keep them supple as feet lose their natural oils as they age and nails can become brittle.

• Keep feet warm by wearing warm socks or stockings. Avoid anything too tight which may restrict circulation or cramp toes.

• Stay active and on the move as this tones up muscles, helps to strengthen arches and stimulates blood circulation.

• Ensure you choose well-fitting, supportive footwear.
