This is a great recipe for carrot cake that’s easy to make and delicious to eat! Always a popular choice, it’s the perfect cake to serve at a coffee morning.

Carrot Cake

Ingredients:

  • 250g self-raising flour
  • 2 teaspoons ground cinnamon
  • 400g caster sugar
  • 350ml vegetable oil
  • 4 eggs
  • 350g grated carrots
  • 120g chopped walnuts
  • Cream cheese icing:

  • 225g cream cheese
  • 110g margarine, softened
  • 450g icing sugar
  • 120g chopped walnuts
  • 1 teaspoon vanilla extract

Method:

  1. 1. Preheat the oven to 180°C / Gas 4. Grease two 23cm round cake tins.
  2. 2. In a medium bowl, stir together the flour, cinnamon and sugar. Add the oil and eggs, mix until blended, then stir in the carrots and nuts. Divide the cake mixture evenly between the two prepared tins.
  3. 3. Bake for 25 to 30 minutes in the preheated oven. A skewer inserted into the cake should come out clean. Cool cakes on wire racks before removing from tins.
  4. 4. To make the icing: use a medium bowl, cream together the butter and cream cheese, add the sugar and cream well. Stir in the nuts and vanilla. Use to fill and ice the cooled cake layers.

Thinking of organising a coffee morning? Follow our top tips and make the event a piece of cake!

Hosting a coffee morning is a wonderful way to raise money for charity. It’s also a great opportunity to get together with neighbours, friends and family.

Top tips for a successful coffee morning:

Decide when and where

Choose a day and time that would work best for you. Lots of people host coffee mornings in their own home but you could also hold it in a local community centre, school hall or even at work.

Invite everyone you know

Invite friends, family, neighbours and work colleagues. Some people may prefer written invitations through their door while others might be happy with an email. If you’re on social media, make sure you share the event. If you want to get to know your neighbours better, this could be the perfect opportunity!

Let people know it’s a fundraising event

Make sure you tell your guests upfront that you are raising money for charity so they come prepared. Make sure you have a donation box or basket.

Get baking

Cupcakes, tray bakes, fridge slices, homemade biscuits, the list is endless. Always a popular choice, carrot cake is the perfect cake to serve at a coffee morning - click here to see our simple recipe. Offer your goodies with tea or coffee. It’s a good idea to auction or sell off any left overs at the end so make sure you have bags or boxes so people can carry it home.

Make it look beautiful

Cake stands, napkins, flowers and bunting can help to create a great atmosphere.

The most natural way of eating fish is to eat varieties that are in season and therefore plentiful. This helps to reduce the impact we have on the fish population. Sardines are particularly abundant in September so it’s a great time of year to make the most of this healthy, flavoursome fish.

Sardines are an oily fish that are packed with protein and are rich in omega-3 so they’re good for your heart. They’re also a rich source of bone-building vitamin D.

This simple recipe is easy to make and is ideal as a starter or to serve at a party:

Sardines on bruschetta with crème fraice

Sardines on bruschetta with crème fraiche

Ingredients:

  • 4 fresh sardines, cleaned and filleted
  • 4 thick slices Italian bread
  • 2 tablespoons olive oil
  • 1 clove garlic
  • Salt and fresh ground black pepper
  • 1 lemon
  • 1 teaspoon chopped Italian flat-leaf parsley
  • Crème fraiche
  • Fresh tomatoes

Method:

1. Lightly oil the bread slices with olive oil and place them on a baking sheet. Place under the grill and toast until golden brown and crisp.

2. While the toast is still warm, rub 1 side of each slice with the fresh garlic. Place 2 sardine fillets, silver skin side facing up, on each toast and put back on the baking sheet. Season with salt and pepper.

3. Grill for 4 to 6 minutes. Remove the tray from the oven and garnish with a squeeze of lemon juice, chopped tomatoes, chopped parsley and a spoonful of crème fraiche. Serve immediately.

Autumn often brings lovely, misty mornings and bright, sunny days so it’s a beautiful time of year to explore the countryside. Most boats are centrally heated to keep you warm on colder days and you’ll find plenty of cosy, canal-side pubs to welcome you along the way.
